Garden Grove Brewing & Urban Winery, known for its genre bending beers, wines, ciders, & meads, is breaking the mold once again with the debut of Synthesis.  Synthesis (16% abv) is a hybrid between a White Tawny Port, Mead, and a Barley-wine. Aromas of fig jam, white raisins, baked apples, oak and vanilla harmonize with flavors of Bit O’ Honey, toasted nuts, caramelized sugars and pear/fig reduction. The process behind crafting Synthesis is every part as unique as Garden Grove & Urban Winery itself. The fermentable sugars are roughly equal parts wine grapes, honey, and barley drawn from, Vidal Blanc & Chardonnay Grapes, Orange Blossom & Wildflower Honey, and Wheat & Barley.  As the initial fermentation slowed the Vidal Blanc and Chardonnay juices, as well as both honeys were blended into the fermenter. Fermentation was started with an English ale yeast and was finished with a wine yeast isolated in the Languedoc region of France and then aged it for 14 months in Syrah & Cab Sauvignon barrels. Synthesis is very lightly carbonated to enhance the White Tawny Port characteristics and has wonderful oxidative characters reminiscent of a Tawny Port with strong notes of caramelized fruits and toasted honey. A true fusion of wine and beer.

Synthesis follows in the tradition of the unique hybrid styles created by Garden Grove Brewing & Urban Winery such as:

Akari 10.1%, a Sake and mead hybrid aged in Chardonnay barrels for 22 months.  Delicious notes of sherry, coconut, and Koshu Sake.

Criminal Mischief 9%, a hybrid between a beer and a vermouth utilizing botanicals grown in Garden Grove’s organic urban garden.  Bright, herbal, yet balanced with a rich palate of botanicals begging for contemplation

Guns N’ Rose 9%, our take on a dry Rosé made with 100% beer ingredients. Made from a very simple malt base fermented with wine and Belgian yeast. This ensures the beer is fruity, dry and well suited to highlight the flavors extracted from the wine barrels. Our Rosé was fermented in Russian River Pinot Noir Barrels and aged in Chardonnay barrels for six months and gains color and acidity from hibiscus flowers. Dry, Austere, and great acidity.

Death Belgian Quadruple 10%, pushing the boundaries of Belgian beer into the realm of wine. We strive to bring out ripe and dark fruit flavors reminiscent of rich red wines by fermenting with 2017 Petit Verdot grapes grown in our own vineyard at Arterra Winery. Aged 9 months in American Oak Cabernet Sauvignon wine barrels. Two-time award winner.

Traditional Barleywines are made from 100% barley but we included roughly equal parts Barley & Wheat, Vidal Blanc & Chardonnay Grapes, and Orange Blossom and Wildflower Honey and then aged it for 14 months in Syrah & Cab Sauvignon barrels.
